The Staple

So yesterday we found a staple in Kaelyn's gums. I sat her down for dinner and she started crying after every bite she took. We couldn't figure out what was wrong. Was her food too hot? No. Did she have a tooth ache? No. She has a staple in her gums!! So we got the tweezers and removed it and all was well, but poor baby! She puts EVERYTHING in her mouth!!

Why I haven't been good at blogging

Well I should add that I haven't been very good at keeping anything up lately because... I am 13 weeks pregnant (and feeling pretty sick - hopefully I am on the tail end of it all).

I just got a comment from one of my readers asking me to post more on my blog. I know, I know I have been absent these past few months, but my blog isn't the only thing that has been negleted.

We are really excited though for this next addition. Yesterday was the first time we got to hear the heartbeat. The nurse before she put the dopler on my stomach stated that because the baby is really small still it will probably be hard to find the heartbeat, but at soon as she put that thing on my tummy we instantly heard it. Already competing for attention!

Jay's mom went with me and the two girls to my appt. After 5 minutes of the two little girlies touching everything in the checkup room I asked her if she would take them out and wait in the waiting room. It was too much.

She told me later that as soon as they got into the waiting room Madelyn turned to another little girl sitting next to her and loudly proclaimed "I don't have a baby in my tummy!" She did ask the nurse too if she could open my tummy so she could see the baby. Such a cutie!

Happy Birthday Madelyn!


Three years ago on our 2nd anniversary we welcomed Madelyn Joy into our lives!
Since we share this day with her we celebrated her special day a few weeks ago when some family was in town visiting.
What a joy it is to have this smart little 3 year old in our family!
She definitely keeps us on our toes with her witty and girly personality.
I feel so blest to be her mom!

Maddy's 3rd's Birthday Party




This past weekend we had Madelyn's 3rd Birthday party. She has insisted for several months now that it be a pink pony party so that is what she got. We had 8 of her little girlfriends over for the festivities. They danced, played hopscotch and much more. It was so much fun and Madelyn loved it!

Fun Play Area in Cedar City, UT




This last weekend we headed up to Utah for my little sister's wedding. It was so fun to be with family for the weekend. I love my family so much! I feel so lucky to have such wonderful people to share my life with.

Jay couldn't come up until Friday after work so I convinced my friend Kim to ride up with me (she had family that she visited up there as well). On our way up she showed me this really fun kids park in Cedar City, UT. It was so fun! There were swings and fun hiding places, forts, cars, and yes even a space shuttle. The kids loved it!

Lentil and Veggie Tostadas



My mother-in-law is a vegan so when she comes to visit we always get treated to delicious vegan dishes. A month ago when she came to visit Madelyn and I decided to make her a treat. This recipe is actually from my Betty Crocker Cookbook. It was by far one of the best dishes I have ever eaten (plus it is extremely healthly for you!). As we were eating it we both commented on how it felt like we were eating at an expensive restaurant. If anyone does try it let me know your thoughts.

Lentil and Veggie Tostadas

Start to Finish: 20 min. Makes: 4 main-dish servings

1 3/4 cups water
3/4 cup red lentils, rinsed and drained
1/4 cup chopped onion
1/2 teaspoon salt
1/2 teaspoon ground cumin (my new fav. spice!)
1 clove garlic, minced
1 to 2 tablespoons snipped cilantro
4 tostada shells (I found that this recipe makes enough for 6 tostadas)
2 cups assorted chopped vegetables (such as broccoli, tomato, zucchini, and/or yellow summer squash)
3/4 cup shredded Monterey Jack cheese (3 ounces)

**I also added avocado on top

1. In a medium saucepan stir together the water, lentils, onion, salt, cumin, and garlic. Bring to boiling; reduce heat. Simmer, covered, for 12 to 15 minutes or until lentils are tender and most of the liquid is absorbed. Use a fork to mash the cooked lentils; stir in cilantro.

2. Spread lentil mixture on tostada shells; top with vegtables and cheese. Place on a large baking sheet. Broil 6 inches from the heat about 2 minutes or until cheese melts.
